Superb performance

I originally bought this pot to boil water. The wide diameter let me take full advantage of a full flame 17500 BTU burner. For the past several months, it has done that job admirably. I never asked any more of it as I have several other pieces for the "real" cooking.
I just cooked for 20 people coming over for a dinner party and was making a soup in my Le Creuset dutch oven. I decided to make the braised pork dish in this Calphalon One Infused Anodized 8-1/2-Quart Dutch Oven with Stainless Steel Lid. It did an unbelievable job. The pork browned perfectly, creating a gorgeous fond without any burning, even after 3 batches. Once I added the onions and wine, all of the beautiful fond came right up and added a great taste to the sauce. I am really impressed.
If you need to brown and braise large quantities, I highly recommend this pan!

Great for baking and stove top cleans up stickons with a sinple wash cloth and dish soap. Used to make soup, spagetti sauce, and baked apples. Great with the low height, the best pan I have ever owned (50 years cooking).

I returned a similar pan that was not nearly as heavy and durable as this. Yes, I had to add a few bucks to it, but it was well worth it!!!
Amazon did GREAT, and EASY with the return/replacement!!! I was anticipating a problem, especially since the original one was a gift from someone.

My favorite pan

I searched for a big wide pan that I could use to make my Paella. Although it is not really a Paella pan, it is perfect to fit lots of rice and seafood. I have used it whenever I have had a big dinner party and I want to make risotto, stews and big meals. It heats very evenly and is very easy to clean. I will definitely buy this brand in the future!

Worried about non stick....no need

I have now used this pan several times both on the stove top and in the oven. I am very impressed. I was concerned about it not having the non stick surface that my commercial non stick calphalon. It is very easy to clean up and it cooks very well. The large size was also a concern. After receiving this pan and using it, the large size has not been a problem, in fact it is a plus. This is one you can buy with confidence.
