Perhaps the most basic and versatile knife for paring, peeling, trimming, and dicing fruits and vegetables, with a slightly longer blade for preparing larger fruit, herbs, and onions. This high-performance knife has been created to meet and exceed the most exacting culinary standards of the world's greatest chefs, those of Le Cordon Bleu culinary school. The knife is precision forged from a single blank of high carbon steel and has a thinner blade and a redesigned bolster that reduce the overall weight of the knife for improved comfort and control; the redesigned bolster allows for precision cutting with the heel of the blade. The knife is incredibly sharp: the knife has a specially-polished cutting edge which eliminates the microscopic teeth and allows for more precise cuts. The seamless, completely hygienic handle construction features a durable Hostaform-C handle, triple-riveted to the fully-visible tang. Made in Solingen, Germany, Wüsthof knives offer a harmonious blend of precision cutting performance, integrity of materials, safety, and comfort. The knife is hot-drop forged by hand from a single blank of high carbon no-stain steel, a specially alloyed surgical steel consisting of exacting proportions of carbon, chromium, molybdenum, and vanadium. Designed in conjunction with chefs at the legendary Parisian culinary arts school, the Wusthof Classic Le Cordon Bleu collection showcases a trimmed bolster that reduces fatigue and allows full use of the entire blade. Lighter in heft than its standard Classic counterpart, yet still beautifully balanced, this 4-1/2-inch paring knife peels, cuts, trims, dices, and tackles other small jobs with the perfection professionals expect. Like all Classic knives, the paring knife is precision forged from a single piece of high-carbon, stain-resistant steel. The blade has been impeccably ground, tapered, and polished, and its edge laser-tested for uniformity. After repeated use, the edge may be easily resharpened using a sharpening steel. Traditional in look, each Classic Le Cordon Bleu knives is seamlessly constructed with a visible full tang triple-riveted into an ergonomically-shaped synthetic handle. Though the knife is dishwasher-safe, Wusthof recommends hand-washing all fine cutlery. Made in Germany, the knife is fully guaranteed to be free of defects in materials and/or craftsmanship. --Ann Bieri
