Couldn't be happier

I ordered this stainless steel pan, as I am gradually replacing my aluminum ones. I was a bit put off when I first opened the box and saw how shallow it was, but have since come to love it for that very thing. There's more pan surface on the burner, so water boils sooner. In general, everything heats up very quickly. The see through lid is great. And it's quite beautiful to look at. Clean up has been a breeze. If it gets a little stained-looking, I use Barkeepers Friend (found in the grocery store), and it comes back like new. I'd recommend this to anybody.

everything i would expect and more

i bought this pan to make a cup of rice, or some chili or soup. being single and not a big fan of perpetual leftovers, this is the right size to do any of those. i chose free supersaver shipping, but the pan arrived the next day! i know i live within 10 miles of one of amazon's warehouses, but still!
i had been making chili for years in a cheapie 4 qt stainless chef's pan with the disc on the bottom, but without the aluminum core clad sandwich up the sides to evenly conduct the heat. tasty as it was, i was somewhat disappointed at how the burger and onion wouldn't quite cook apart and soften as much as i liked. that all changed today with this pan. wow-everything just melted together after an hour of simmering. and the lowest flame simmers slightly lower and therefore longer in this pan. i'm very pleased.

I purchased this piece as it was the lowest priced on this line of Calphalon products, so I could make sure if this is the kind I would like to use as a set. I have been happy with my purchase so far using it for 3+ months. I use it for my every day Indian cooking.
- I am getting used to the heaviness while handling
- If I burn food, I just clean up with water, sprinkle baking soda with a little water and leave it overnight. It comes out spotless the next morning with normal scrubbing. Dont rub in dry soda which will cause scratches.
- Dont expect it to work like a non-stick pan!
- I add more oil than usual since food gets tasty on this pan, but since some oil is left on the pan I am fine with it
- I havent noticed any spots on the inside & outside like mentioned in other reviews and have never had to use bar keepers friend.
- I make Indian stir fries, seasoning and curries. Oatmeal, pickles etc.
- Good design on handles and rim unlike all-clad
- Shines as good as new (I hand wash it)but has a few scratches on the base due to my cooking range stove top design.
- I use it on a flame range and think it should work as good on an electric range with medium heat.
- I mostly use wooden spoons for mixing since heavy metals cause scratches that would lead to more food sticking. I use metal spoons for serving though.
- It is so beautiful that I serve food in the same pan even for my guests. It almost looks like silver ware :)
- I like this shallow pan since it helps both for saute's and curries.
- It does indeed take some time to heat up but once its hot, it keeps very hot!
I am looking forward to buying the 13 piece pan but am waiting for a good deal!

Heats evenly and very versatile

This is an excellent deal for a very versatile pan. It's good looking, heats very evenly and doesn't stick or create little burned patches like the cheaper stainless steel stuff will. I've used it to make risotto, pasta sauces, Thai curries, stews, beans, chili and even rice(for 2-4 people) and it heats up very quickly and cooks evenly, nothing sticks and everything comes out picture perfect - just remember to heat up the pan before adding fat to avoid sticking. The glass lid is good for monitoring the progress of rice and covered stews even though it does fog up, and the lid is really tight and retains moisture beautifully. The handle stays comfortably cool too. As a bonus the pan cleans up almost as easily as a nonstick one. This will spoil you for regular stainless steel pans or anodized aluminum.

Perfect for everything!

My small non-stick saucepan had almost all it's non-stick coating removed from it over the past 8 years, so I thought I'd replace it with this one. I use a small one for hardboiled eggs, heating soups, for sauces, rice, couscous, and steaming veggies. This one is perfect, I use it every day and I don't have to worry about the non-stick coating coming off.
